Pork Nasi Goreng with Baby Corn and Spicy Cucumber
<p>When she traveled to the Indonesian island of Bali, Chef Elana ate <em>nasi goreng</em> for breakfast every morning. The Southeast Asian specialty is made with leftover rice seasoned with shallot, garlic, tamarind, chile, and sweet soy sauce, often with an egg mixed in or fried as a topping. In this version, we're tossing pork into the mix of crispy rice, veggies, and sauce, plus an optional egg scrambled in at the end. A side of spicy cucumber rounds out the rich, sweet flavors.</p>
