Chicken and Mushroom Cassoulet with White Beans and Crispy Breadcrumbs
<p>Named after the casserole dish it's cooked in, rustic French <em>cassoulet</em> is one of our favorite warming, saucy dishes to curl up with in the chilly weather. Though it's traditionally made with pork, we're swapping in seared chicken thighs, but keeping it traditional with the use of creamy white beans. Sautéed carrots, cremini mushrooms, and a fragrant array of fresh and dried herbs add even more flavor to this dish, which is best served with a glass of robust red wine.</p>
