Miso-Glazed Eggplant with Corn, Scallion, and Snap Pea Fried Rice
Whenever we're at a Japanese restaurant, we can never resist an order of miso-glazed eggplant. The combination of sweet and salty along with the crisp yet fluffy texture gets us every time. Chef Michelle transformed this much-loved side into the star of the meal, pairing it with a lightened-up take on a Chinese takeout staple: fried rice. This seasonal version incorporates corn and sugar snap peas, along with crushed red pepper and ginger. Peace out, takeout!
