I’m the restaurant’s third sushi chef, and I’m committed to continuing the tradition of authentic Edomae (Tokyo-style) sushi. Developed in the early 1800s by a chef in Edo (present-day Tokyo), the technique centers around bite-sized servings formed by hand.
