Charles' Pan-Fried Chicken
It's a hole-in-the-wall place, but the charismatic Charles Gabriel makes the best damn chicken we've ever tasted. Crisp and beautifully seasoned, it's served with a choice of sides that include collard greens, yams, mac 'n' cheese and corn bread. Don't expect any designer details: just four unadorned tables, Styrofoam containers, and proof that a book (or chicken joint) must never be judged by its cover.
